The speed that water flows into the potato cylinder will be determined by the concentration gradient between the potato cylinder and the water. If there is a high concentration of free water molecules in water and a low concentration of free molecules in the potato cylinder, then water will flow more quickly into the potato. From my preliminary work I guess that the concentration of sugar inside the potato is close to 1.5M.
